Can you automate attachment exporting?
We can export sheet data automatically using tools like Power Query but is there a way to get attachments out of smartsheet and into our server? Or is this something that needs to be done by hand?

It sounds like you might be using the Smartsheet API to get information. If so, you can use "Get Attachment", but the way this works is the response includes a temporary URL to download the file within 2 minutes of retrieving the information. (See: Smartsheet API Get Attachment).
As an alternative, within the Smartsheet application you can set up weekly recurring backups. This automatic backup includes a folder containing any attachments that were uploaded directly to your sheets from a computer or mobile device (note that attachments from online sources are not included in the backup). (See: Create a Backup Copy of Your Smartsheet Data)

I was working with the API for a bit but then later realized it was probably a more complicated solution for what we needed. I didn't know about the backup feature but that should work perfectly. Thank you @Genevieve P!
